Geisha from Chelín

Enrique Lopėz and his farm Finca Chelín is renowned for its high-quality lots, with multitudes of experimental ferments of high cost and quality varietals.

Enrique is highly influential in Oaxaca, and delivers educational training and greater access to buyers for other producers in the region.

The “Rehydrated Washed” method is one we have only recently discovered, thanks to Enrique and his innovative work here at Candelaria Loxicha, Oaxaca in Mexico.

This lot is an incredibly refined Geisha varietal from a unique region not typically known for its high-end coffees. Enrique’s focus is to create a great reputation for Oaxacan coffees.

The Producer

Cherries are picked very ripe (dark red, purple colour) and after floaters are removed, clean cherries rest in concrete tanks until the next day.

Early in the next morning they are put out to dry until they start to become raisin-like (roughly 20 hours of direct sun, thus 3-5 days).

This process is used to enhance tartaric acidity and a tropical fruity profile. It would be possible to de-pulp the cherries at this stage, however, the cherries undergo an overnight soaking in water, leaving them to appearing like freshly picked cherries.

This makes de-pulping possible again and the cherries are processed like normal washed coffees at Chelín. This process aims to combine the best of a tartaric acidity, fruity profile and complexity of a natural but the clarity and cleanliness generally promoted by the washed process.
