Excellence from the Lopez family.

This is the first time working with Domingo’s lots. Clean, top end processing techniques result in elegantly defined fruits and a lingering finish. Domingo recently passed away and now his wife Gumercinda Gomez runs the farm.

The Lopez family own 8 hectares of land in San Antonio Huista, Huehuetenango. Their farm, El Pajal, sits at 1920masl and is planted with Caturra, Catuai, Bourbon and Pache.

Domingo has been preserving his pure Arabica varieties (despite the rise in the use of Catimores in the area) due to his higher cup quality and farm management practices, meaning the coffee trees are not affected by leaf rust.

The farm is organic certified and Domingo shows great respect for the environment and sustainability of coffee production in this area, focusing on producing coffee without inputs and alongside other carefully selected food crops.

  • Washed

    Ripe cherries are washed and then pulped to remove majority of the skin & fruit from the bean before being fermented. Fermentation is brief and helps to remove any remaining material from the pulping process as well as adding complexity to the bean.

    The beans are then washed and sun-dried, mechanically dried, or a combination of the two until the desired moisture level is reached.
