Nestled among expansive mountains, La Esmeralda is managed by Cesar, his wife Maria, and their son Kevin.

Since our visit to La Esmeralda in 2022, we've been consistently drawn to Cesar's lots. We saw how the meticulous processing practices enhanced the depth of fruit in the coffee's profile.

We've selected a Pink Bourbon varietal with both natural and washed processes, allowing you to experience how each method shaped the taste profile. This particular lot is a natural process, which promotes a deep booziness and a pineapple sweetness.

The Producer

With a lifelong immersion in coffee, Cesar inherited his expertise from his parents, former farm managers. Transitioning from commodity-grade coffee, he now cultivates high-quality varieties and pushing the boundaries with experimental processes.

This lot was carefully hand-picked to select only the ripest cherries, followed by meticulous hand sorting to remove defects. The coffee is then sun-dried on raised beds in controlled temperature conditions until reaching the ideal moisture content.

  • Natural

    Ripe cherries are dried whole commonly on patio’s, drying beds or even the bare earth allowing the bean to ferment naturally encased by its fruit.

    The cherries are turned regularly to reduce the risk of defects and ensure even drying.

    Once the cherries resemble raisins and the target parameters are met the coffee is hulled and sorted in the dry mill.
