Second Sidra harvest.

Welcoming back Enrique Lopéz—a producer whose dedication to craft and innovation continues to inspire. This season, we have selected two exceptional coffees, a hydro-washed Geisha and a Honey Sidra.

This lot underwent a honey process, marking Enrique’s second harvest of the Sidra varietal on Chelin since its introduction nine years ago.

Over time, the trees have matured, and the quality has flourished, this harvest, yielding a complex melon sweetness.

The Producer

Enrique is a third-generation coffee farmer from Oaxaca, Mexico, renowned for his high-quality lots, innovative fermentations, and exceptional varietals.

Enrique has become highly influential in Oaxaca, delivering educational training, talks and giving buyers access to other producers in the region. Enrique’s focus is to create a great reputation for Oaxacan coffees.

  • Honey

    Ripe cherries are pulped to remove the skin and fruit while leaving a layer of sticky mucilage enchasing the bean.

    The beans are then dried until the desired moisture level is reached.

    A colour spectrum denotes the different levels of honey processing, characterised by the amount of mucilage remaining on the bean.

    Ranging from yellow honey which will display a delicate & refined flavour profile to black honey displaying syrupy bold characteristics.
