Nestled among expansive mountains, La Esmeralda is managed by Cesar, his wife Maria, and their son Kevin.

Since our visit to La Esmeralda in 2022, we've been consistently drawn to Cesar's lots. We saw how the meticulous processing practices enhanced the depth of fruit in the coffee's profile.

We've selected a Pink Bourbon varietal with both natural and washed processes, allowing you to experience how each method shaped the taste profile.

This coffee underwent a washed process, leading to a structured, complex cup with a raspberry acidity and a honey sweetness.

The Producer

With a lifelong immersion in coffee, Cesar inherited his expertise from his parents, former farm managers. Transitioning from commodity-grade coffee, he now cultivates high-quality varieties and pushing the boundaries with experimental processes.

This lot was harvested following strict ripeness criteria, floated and hand-sorted to remove defects. Subsequently, the cherries undergo a 30-hour underwater fermentation before being pulped. The parchment is delicately washed and then dried under carefully controlled temperature conditions.

  • Washed

    Ripe cherries are washed and then pulped to remove the majority of skin and fruit from the bean before its fermented.

    Fermentation is brief and helps to remove any remaining material from the pulping process as well as adding complexity to the coffee.

    The coffee is then washed and sun-dried, mechanically dried, or a combination of the two until the desired moisture level is reached.
