Quality and sustainability.

The Vides Farm is situated in the heart of Libertad, Huehuetenango, at an elevation of 1600 masl. This lot is a Caturra and Bourbon cultivar, which has flourished under the shade of the farms Gravilea and Inga plants.

We were impressed with this naturally processed lot for it’s velvet texture and cherry like sweetness.

The Producer

There are over 40 permanent employees and over 100 workers in peak harvest periods. The cooperative has a commitment to quality while using the most sustainable practices.

Pruning and selective picking means only the finest cherries are harvested. The coffee is then depulped before going through a meticulous fermentation process.

The harvest is then transferred to patios and dried for 15-18 days on average.

Ripe cherries are dried whole commonly on patio’s, drying beds or even the bare earth allowing the bean to ferment naturally encased by its fruit.

The cherries are turned regularly to reduce the risk of defects and ensure even drying.

Once the cherries resemble raisins and the target parameters are met the coffee is hulled and sorted in the dry mill.
