Precise traceability.

The Hafursa Haru washing station is situated near Yirgacheffe town, featuring 12 fermentation tanks and over 169 drying beds. These facilities ensure a swift turnaround while maintaining precise traceability of the coffees. This particular lot was processed using drying bed 160.

Ethiopian varietals, often referred to as Heirloom, exhibit high genetic diversity, meaning unique characteristics are found across different regions.

This washed process Heirloom from Yirgacheffe region reveals refreshing berries and floral notes.

The Producer

This lot was cultivated by local smallholder farmers in the region, each delivering their cherry harvest to the central Hafursa Haru washing station.

Wet processing was introduced to Ethiopia in the 1970s, with Yirgacheffe being the pioneering region. The cherries are carefully picked and hand-sorted to remove any defects.

Next, they are pulped and allowed to ferment before being washed and dried on raised beds to a precise humidity of 11.5%. The parchment is then locally sorted before being transported to the dry mill facility in Addis Ababa.

  • Washed

    Ripe cherries are washed and then pulped to remove the majority of skin and fruit from the bean before its fermented.

    Fermentation is brief and helps to remove any remaining material from the pulping process as well as adding complexity to the coffee.

    The coffee is then washed and sun-dried, mechanically dried, or a combination of the two until the desired moisture level is reached.
