A family micro-mill.

Our selected lot was cultivated at Finca Los Tonos by Johnny Abarca and processed at his family’s micro-mill.

The mill was founded in 2015, and has dramatically improved control and quality, recently earning a spot in the Cup of Excellence finals.

On the cupping table, we were impressed by this lots mandarin acidity and dark chocolate finish.

The Producer

Costa Rica has become one of Central America's leading coffee producers, with this lot originating from Brunca, one of the country’s eight famous growing regions.

The cherries are carefully handpicked based on ripeness, then delivered to the micro-mill. They are dried on raised beds, regularly raked to ensure uniform drying. This process lasts 10-20 days, after which the cherries rest for two months before dry milling.

  • Natural

    Ripe cherries are dried whole commonly on patio’s, drying beds or even the bare earth allowing the bean to ferment naturally encased by its fruit.

    The cherries are turned regularly to reduce the risk of defects and ensure even drying.

    Once the cherries resemble raisins and the target parameters are met the coffee is hulled and sorted in the dry mill.
