Daterra Masterpiece.

Each year Daterra’s own experts search the vast number of unique small lots on the farm, which are known as “Masterpieces”.

We have selected a Geisha varietal from this years Daterra Masterpiece range with a unique process.

The lot underwent a split anaerobic fermentation, involving half being naturally fermented for 60 hours while the other half is processed with a yeast strain.

This dual approach yields a richer, more complex flavour profile, revealing orange blossom and lychee in our selected lot.

The Producer

The Pascoal family are pushing boundaries in many aspects of coffee production, much of which we will share with you as we begin to explore the vast range of coffees they export.

On the Daterra farm a section is dedicated to experimenting with new and unusual varieties, processing methods and drying techniques. Each coffee in the masterpiece range has a unique cup profile, scores above 88+, is fully traceable, and can never be replicated again.

  • Split Anaerobic

    Ripe cherries are split, one half being placed in oxygen-expelled bags or containers and left to ferment for a specified duration at a controlled temperature. The remaining half undergoes fermentation with a particular yeast strain, serving as the control.

    Once the specific fermentation has been reached from each method, the coffee is recombined and follows a natural process procedure. This dual approach yields a richer, more complex flavour profile.
