We invite you to discover the subtle differences between these processing methods and how they unfold unique nuances in each cup.

The washed process of the Red Bourbon reveals notes of red apple and vanilla.

The Producer

Founded in 2015 by Rutaganda Gaston and Mukantwaza Laetitia, Rwamatamu Coffee is a family-owned farm and washing station in Kiyube, within the western province of Rwanda. The farm sits in the surrounding hills of the picturesque Lake Kivu.

In 2023, Rwamatamu invested in a dedicated cupping lab to elevate their quality control and refine their approach to flavour assessment.

  • Washed

    Ripe cherries are washed and then pulped to remove the majority of skin and fruit from the bean before its fermented.

    Fermentation is brief and helps to remove any remaining material from the pulping process as well as adding complexity to the coffee.

    The coffee is then washed and sun-dried, mechanically dried, or a combination of the two until the desired moisture level is reached.
