Coffee 1 – Gotiti, Ethiopia (Natural)

Gotiti is a naturally processed coffee from Southern Ethiopia, produced from local heirloom cultivars, traditional Arabica varieties that have been grown in Ethiopia for generations.

Gotiti is one of Ethiopia’s best-known coffee-growing areas, recognised for both washed and naturally processed coffees. 

The combination of high elevation, heirloom cultivars and careful drying gives this lot its distinctive character.

The result is a clean, expressive cup with notes of stone fruit and brown sugar.

Coffee 2 – Tinamit, Guatemala (Honey)

The second coffee in October’s subscription comes from the Tinamit Cooperative, on the shores of Lake Atitlán in Guatemala.

Ripe cherries are handpicked and delivered to the cooperative on the same day, where they are sorted and depulped. 

During this process, the mucilage surrounding the bean is left in place, which defines the coffee as honey processed.

The coffee is then dried on the patio for five to six days before being moved to raised beds under shade, where it is regularly turned as it continues to dry.

The resulting cup has notes of blackberry, cacao and toffee.
