Solasta
Our refreshed subscription takes its name from the Scots Gaelic word Solasta, meaning bright and shining. It reflects the character of the coffees we highlight each month.
Coffee 1 – Gaharo, Burundi (Washed)
Our first selection is a washed Red Bourbon from Gaharo Hill, processed at Bukeye Washing Station at the base of the hill.
Bukeye was built in 2013 with the local community and is still closely tied to the farmers who deliver cherry there today.
After sorting, the cherries are washed, fermented, and then dried slowly on raised beds. The result is a structured cup with raisin-like sweetness and a floral finish.
Coffee 2 – Gaharo, Burundi (Natural)
The second coffee is the same Red Bourbon, processed as a natural.
The cherries are sorted and then dried whole over several weeks on raised beds. As they dry, the fruit gradually influences the character of the final cup.
The result is a more fruit-forward expression, with peach notes and a caramel sweetness.
