Local heirloom varieties

Gotiti, in Ethiopia’s Gedeb region, is known for its high-altitude coffee production and diversity of local heirloom varieties. Grown beneath indigenous shade trees at elevations reaching 2,200 metres, the coffees from this area are shaped by a distinctive growing environment.

This natural lot is sourced from smallholder farmers around Banko Gotiti, where Ephtah Specialty Coffee works closely with the local community to select and purchase ripe cherries.

Through long-term relationships and investment in its supply chain, Ephtah places an emphasis on quality at every stage, from harvest through to processing.

The Producer

The coffee is processed at a drying station in Banko Gotiti, exclusively managed by Ephtah Specialty Coffee. Cherries are carefully selected through flotation before being spread across raised beds.

As a natural process, the whole cherries are dried on raised beds for approximately 12 to 15 days, with careful attention to consistency throughout.

Once dried, the coffee is hand-sorted by local women to ensure quality and consistency.

Ripe cherries are dried whole commonly on patio’s, drying beds or even the bare earth allowing the bean to ferment naturally encased by its fruit.

The cherries are turned regularly to reduce the risk of defects and ensure even drying.

Once the cherries resemble raisins and the target parameters are met the coffee is hulled and sorted in the dry mill.
