Exploring Chinese coffee.

Wang began his journey in coffee in 2016 when he returned to his hometown of Baoshan in Yunnan to explore the region’s potential.

He travelled through the Lujiangba mountains, learning from the land and the people who had worked it for generations. There, he discovered Red Dragon Estate and began working closely with Yang, a lifelong coffee farmer whose knowledge shaped the farm’s future.

At 1,887 metres above sea level, Red Dragon Estate requires care and patience. From the start, Wang focused on one principle: only fully ripe cherries would be hand-picked.

The Producer

By paying above market rates and supporting the farm’s replanting, he ensured that careful harvesting became the foundation of the coffee’s quality.

After completing training in tasting, roasting, and brewing, Wang returned to the estate to plant 70,000 Typica seedlings and continue developing the farm. The honey-processed Typica he produced reflects this approach.

It is a coffee that reveals a tart cherry acidity and warm spices.

  • Honey

    Ripe cherries are pulped to remove the skin and fruit while leaving a layer of sticky mucilage enchasing the bean.

    The beans are then dried until the desired moisture level is reached.

    A colour spectrum denotes the different levels of honey processing, characterised by the amount of mucilage remaining on the bean.

    Ranging from yellow honey which will display a delicate & refined flavour profile to black honey displaying syrupy bold characteristics.
