Exploring Chinese coffee.

In 1999, Hongjun Zhang began working the rainforest valley of Menghai County in Xishuangbanna, Yunnan.

Originally from Shanghai, he committed himself to developing Yunnan coffee through long-term care for the land and close collaboration with the people who farm it. Yunlan Estate was founded that same year, shaped by patience.

Sitting at 1,750 metres above sea level, Yunlan Estate grows more than twenty rare coffee varieties. Cherries are hand picked at full ripeness and processed in small, carefully managed lots.

The Producer

While much of today’s coffee culture leans toward experimental fermentation, Zhang continues to focus on washed, sun-dried, and honey processes, allowing each coffee to reflect its place with clarity.

In 2014, a fire destroyed fifteen years of work at the estate. Zhang chose to rebuild, replanting and refining the farm with renewed focus.

Yunlan continues to develop through resilience and a long-term commitment to quality.

  • Washed

    Ripe cherries are washed and then pulped to remove the majority of skin and fruit from the bean before its fermented.

    Fermentation is brief and helps to remove any remaining material from the pulping process as well as adding complexity to the coffee.

    The coffee is then washed and sun-dried, mechanically dried, or a combination of the two until the desired moisture level is reached.
